Banana – Strawberry Muffins – Gluten Free – Not Keto but one of my favourites
What you will need:
2 Medium Size ripened Bananas
Approximately 7 Strawberries – ripened the better
2 Eggs (I use free range)
Either 30grams Grass Fed Butter or Coconut oil and a Tablespoon of Coconut Oil
1/2 cup Water
2 Tablespoon Psyllium Husk (Fibre)
Cinnamon (optional) to sprinkle on top
4 Tablespoon Xylitol (Sugar replacement) – No I do not use maple, honey or rice malt when I can use Xylitol as it does not convert to sugar/calories. – Can be found in most health stores and some supermarkets.
1/2 cup Almond Flour
3/4 Cup of Gluten Free Self Raising Flour
Save 3 strawberries and slice thinly to place on top before baking
Mix all above ingredients in a blender and pour into 9 Medium sized Patty Pans
Bake for approx 10 mins (until top of muffin is firm and bounces back to touch) In a 180 degrees Oven fan forced.
Can be eaten within 2 days or frozen.
